Abstract Aflatoxins are considered a severe hazard, contaminate dietary products, and cause malignant alterations in liver tissues. Fermented milk (FM) is prepared using probiotic lactic acid strains. This investigation aimed to produce an integrated beverage, inactivating aflatoxins toxicity biotransformation. The proximate analysis of the investigated materials biochemical parameter changes in-vivo experiment were determined. Results reflected extract’s valuable content polysaccharides antioxidants. Nine phenolics identified predominantly with catechin (39.67 ± 1.5 µg/g). FM-fortification by enhancement protein (49.5 2.97 g/Kg) fiber (1.78 0.54 compared FM content.
